Pappardelle to sage, almond and pistachios pesto with stracchino

(Bimby recipe without sour cream)

Ingredients (For 2 people):

  • Fresh pappardelle (250 grams)
  • Stracchino cheese (100 grams)
  • 20 Leaves of sage cleaned and dried
  • Almonds (30 grams)
  • Natural pistachios not salted (20 grams)
  • Cheese Grana Padano (50 grams)
  • Extra virgin olive oil (50 grams)
  • Salt

Process

The preparation is fast so start by boiling plenty of salted water. Meanwhile, in the Bimby (Mixer or mortar) reduce the almonds, pistachios and grain powder: speed 9 for 15 seconds. Then add the sage leaves and chop speed 9 for 10 seconds. Finally add the oil, salt and emulsify speed 3 for 30 seconds. When the water bubbles, plunge the pappardelle that will be ready in no time. Drain it by placing half a glass of cooking water to serve to make our pesto more creamy. At this point, combine the pesto sauce with almonds and pistachios, mix well and serve by adding a bit of fresh stracchino that will create a truly irresistible contrast.
